Taco Soup

1 lb. Zeigler Finest Pork Sausage

1 (16 oz.) can Pinto Beans, do not drain

1 (16 oz.) can Kidney Beans, do not drain

1 (11 oz.) can Shoepeg Corn, do not drain

1 (10 oz.) can Rotel, do not drain

1 (14.5 oz.) can Diced Tomatoes, do not drain

1 (1 ¼ oz.) package Taco Seasoning Mix

1 (1 oz.) envelope Ranch Salad Dressing Mix

Toppings: Tortilla Chips, Shredded Cheese, Shredded Lettuce, Chopped Tomatoes and Sour Cream

 

Cook sausage in a skillet over medium-high heat until sausage is browned, stirring until it crumbles; drain.  Stir in remaining ingredients and sausage into a large Dutch oven. Bring to a boil; reduce heat and simmer for 30 minutes.  Serve with desired toppings.

Yield: 2 ½ quarts

Note: May substitute an extra can of Rotel instead of Diced Tomatoes for extra spicy Taco Soup.
